Position Title: Food and Beverage (F&B) Cost Controller

Reports to: General Manager

Job location: Dove Nest Lodge & Peppercorn Holiday Resort-Naivasha.

Position Summary: We are seeking professional Food and Beverage (F&B) Cost Controller personnel who will manage the operations of the accounts department specifically costs,

As a Food and Beverage cost controller, you are primarily responsible for calculating costs of food and beverage items and also responsible for the short and long-term planning of the F&B controlling and pricing aspects.

This is a hands-on financial position requiring flexibility and an ability to handle multiple tasks simultaneously.

Duties and Responsibilities:

  • Able to effectively control the Food & Beverage Cost
  • Control the Food and Beverage outlets in terms of wastage, pilferage and efficiency.
  • Prepare variance analysis for food & beverage and communicating with relevant parties.
  • Update and maintain receipts into the systems while checking and verifying voids in the POS systems.
  • Check and verify all complimentary sales in POS systems.
  • Responsible for preparing daily Food and Beverage Report and distribute to management
  • Regular daily inspections of quality and state of items in food store rooms on a minimum of once per day.
  • Carry out inventories without fail as agreed with Financial manager or from Head Office of food and beverage stocks
  • Make periodical checks on the value of the restaurant food as compared to posted food totals by the cashiers, follow up with discrepancies / shortages made and ensure that recoveries are made.
  • Prepare the daily and monthly cost report department in relation to cost of sales.
  • Reconcile opening and closing stocks and ensure that excess stock is added in stock register and control stock sheet for food and beverage per outlet
  • Check and ensure that no material is issued out from the store without requisition or approval
    from the respective department head.
  • Coordinate with restaurant management and finance to sort out issues pertaining to F&B.
  • Participate in periodic market survey and in formal negotiation for annual and large contracts
    involving inventory items and advise management on cost saving measures.

Requirements

  • Bachelor’s degree in Finance / accounting
  • A minimum three (3) years of experience in a similar role or equivalent in a busy Hotel,
    preferably a 3 or 5-star hotel.
  • Should have a high command of Excel, etc.
  • Experience with Accounting System, POS Systems and cost and inventory systems.
  • Recognizes an emergency situation and takes appropriate action.
  • Able to establish and maintain a cooperative working relation.
