Position Title: Head Chef

Location: Nairobi

Responsibilities

  • Design menus that enhance customers’ culinary experience while keeping up high quality.
  • Ensure that all food preparation is in accordance with regulatory guidelines.
  • Design standardized food presentation guidelines for each dish.
  • Participate in selection and recruitment of Kitchen staff
  • Training and development of Chefs, Cooks and Kitchen Stewards in all outlets
  • Work closely with the Stewarding department to monitor cleanliness of all back of house areas, equipment, and dining ware
  • Ensure that all recipes and product yields are accurately costed and reviewed regularly
  • Ensure that food stock and par levels within the department and stores are of high quality and meet forecasted needs based on occupancy
  • Monitor inventory levels of commonly used items.
  • Controlling and directing the food preparation process.
  • Approving and polishing dishes before they reach the customer.
  • Ensure wastage is minimized by careful supervision of food preparation methods
  • Ensure proper hygienic storage methods are utilized to prevent food loss
  • Ensure proper staffing for maximum productivity and high standards of quality, stock closing and organize the issuing and receiving of kitchen supplies
  • Schedule and establish a regular cleaning and maintenance schedule for all kitchen areas and equipment.

Requirements

  • Gastronomic education certificate or Culinary University/College/Tertiary level education.
  • At least 5-8 years’ experience as a Head Chef in a busy Hotel, Fast Food Restaurant or Cafe
  • Must show signs of career development.
  • HACCP Certification.
  • Banqueting experience is preferred.
  • English – excellent oral and written skills. Knowledge in a foreign international language will be a distinct advantage.
  • Knowledgeable of food safety regulations.
  • Ability to work independently, thrive under pressure in challenging circumstances and come up with proactive, rational solutions.
  • Ability to establish and retain effective working relationships with staff and clients/vendors.
  • Ability to identify and delegate tasks effectively.
  • Excellent organizational and time management skills.
    Excellent verbal communication skills
    Proficiency in Microsoft Office.
    Ability to track expenses and manage a budget.
