Career Opportunity: Bakery and Production Manager

Company Background: Our Client is the main supplier of pre-processed products and dry goods to various restaurants.

It consists of a series of food processing and warehousing units.

It consists of over 270 staff and is split into six main departments, being Manufacturing, Warehousing and Logistics, Food Safety, Accounts, Maintenance and Business Development.

Their manufacturing arm has 5 sections: bakery, ice cream production, butchery / kitchens, fresh produce, French fries production and coffee roastery.

The Position

Bakery and Production Manager

The bakery manager is directly responsible for the day to day planning and control of the bakery and ice cream production sections of their business.

He/she is responsible for ensuring that all food items are produced in a manner that ensures food safety and are dispatched on time and in full.

The bakery manager is responsible for the occupational health and safety of the bakery and ice cream facilities, 24 hours a day, 7 days a week.

He/she will promote best manufacturing practice, and provide technical baking expertise to the Client, as well as ensuring existing and developed products achieve the level of expectation of their customers.

Key responsibilities for the role will include:

Strategy / Planning

  • Provide leadership for relevant production areas by ensuring adherence to the OHS systems and procedures so that all employees on site have a safe and healthy working environment.
  • Lead, direct, evaluate and develop a team of manufacturing supervisors to meet the standards of the business and targets.
  • Plan the level of staffing, facility, raw material, equipment and any other resources required based on medium- and short-term forecasts, and be responsible for the efficient deployment that meets or is less than the budgeted staff COGS on a weekly basis

Implementation

  • Provide technical baking and ice cream production expertise drawn from training and experience.
  • Ensure all products are consistent and of the required specifications, by troubleshooting challenges that may arise, including process, equipment, operational and skills-related issues.
  • Train and supervise workers, by ensuring that the teams use proper techniques.
  • Support the preparation of the operating budgets and proposals for capital investments for production departments
  • Liaise with other managers across the organization as and when required to ensure effective change management or to ensure that short term objectives are met
  • Liaise with other managers across the organization to ensure existing and developed products achieve the level of expectation of the brand customers, by receiving and acting upon feedback from within and outside the organization
  • Use performance measurement tools to enable all process variables to be measured and optimized to minimize rework and wastage in material and labor resources.
  • Be responsible for coaching and developing the bakery and ice cream teams to be cost conscious and to maintain the culture of responsibility when making timely decisions that will lead to cost implications for the business
  • Ensure effective manufacturing controls are in place to ensure that material COGS meet or beat budget, and that each work order does not exceed +/- 0.50% of standard cost Monitors all production costs against standards, and takes the lead to investigate and resolve any observed variances or trends that do not fall within the pre-agreed standards
  • Provide advice on cost control opportunities in lean processing and manufacturing techniques and food processing methodologies, and further processing concepts

Reporting and Evaluation

  • Actively engage and participate in the leadership meetings, and share relevant updates with the team to ensure that appropriate and timely decisions are made to optimize performance
  • Assume responsibility for investigating incidents and accidents that occur in his/her section and personally ensure that any injured party is treated by managing the team accordingly
  • Regularly and systematically review performance of the bakery production output, quality, waste control, food safety, hygiene and occupational health and safety

Budgeting

  • Manage labor and capital resources to optimize productivity within the manufacturing department to maintain cost within budget whilst meeting the required quality standards
  • Support the preparation of the operating budgets and proposals for capital investments for production departments

Qualifications

  • Diploma in food science or food manufacturing
  • 5 years leadership experience in a busy bakery and/or ice cream production environment
  • Excellent IT skills, analysis of financial data
  • Food development experience, no less than 2 years

  • Strong computer skills, proficient in Word, Excel, and especially PowerPoint.

  • Ability to multitask to meet aggressive time schedules.
  • Strong problem-solving ability with vision and creativity.
  • Uses extensive industry knowledge and commercial acumen to spot commercial opportunities where others may not
  • Regularly thinks out of the box, and encourages others to engage in such brainstorming activity to promote buy-in from key stakeholders and customers
  • Acts as the ‘eyes of the customer’ by holding high culinary standards, tasting commissary product as a matter of routine, and adopting a team-based 5-why approach to resolving variation in product versus specification
  • Works well within a matrix structure, but is aware of how to engage peers to prevent the development of a ‘silo’ style culture
  • Self-motivated, able to implement formal and informal KPI’s to identify performance drift and resolve all known causes external prompting
  • Highly professional and affable, naturally high standard of appearance
  • An enthusiastic driver, but naturally precise and detailed in documentation and process adherence
